We found this recipe for Cauliflower Curry on YouTube through the Pick-Up Limes channel.  We decided to test it, add a few of our own variations and we can honestly say it’s something we cook once every 2 weeks, and sometimes once a week.

Cauliflower Curry Ingredients:

1 head of cauliflower
1 onion
3 garlic cloves, crushed
Splash of water
1 Tbs curry powder (Any curry powder you have at home will do. We like using mildly hot curry powder and rather turn up the heat with chili flakes mentioned below.)
½ Tbs garam masala
½ Tbs turmeric
1 tsp cumin
1 tsp coriander
1 tsp cinnamon
1 tsp salt
Paprika (Our variation: you can also add a few ml of chili flakes if you like a bit more heat)
1 can chopped tomatoes
Handful of cherry tomatoes
1 tin coconut milk
1/3 cup of cooked lentils (Our variation uses chickpeas. We alternate between lentils and chickpeas.)
1 big handful of fresh spinach leaves


Cauliflower Curry Method:

Roast cauliflower with oil, garlic, paprika, salt and pepper for 40 mins on 210 degrees Celsius
Fry onion in oil until golden
Add splash of water and garlic, then fry for 5mins
Add all spices, then fry for 5mins
Add tin of tomatoes, making sure to break up the tomatoes if your tin is whole peeled, then fry for 5mins
Add tin of coconut milk, stir
Add cauliflower, stir
Add lentils, stir
Add spinach, stir and allow to wilt slightly
Serve with naan bread or brown rice
