This recipe was born out of a bit of experimentation in the kitchen, and wanting to use the large supply of beans and pearled barley that we ordered online at the start of the lockdown period.

You can use dried or tinned beans for this recipe, and you don’t have to use our combination of kidney beans and white beans. You could use chickpeas, black beans, lentils or any combination of beans you happen to have on hand.

Hearty Bean Soup Ingredients:

½ cup red kidney beans (dried, but you can use tinned)
½ cup white beans (dried, but you can use tinned)
1 brown onion
1 clove garlic
1 Tbsp smoked paprika
1 Tbsp curry powder
1 tsp ground cumin
1 tsp ground coriander seeds
2 tsp turmeric
1 tsp chilli flakes
½ punnet brown mushrooms
2 baby carrots (or 1 large carrot)
2 large sticks of celery
5 baby potatoes
1/3 cup pearled barley
1/3 cup split peas
1 tsp vegetable stock dissolved in 1 litre of water
Salt and pepper to taste

If you are using dried beans, boil the beans in water until they are cooked. Then drain the water off and set the beans aside.
If you’re using tinned beans, this isn’t necessary. Drain the beans, rinse them off and set them aside for later.

Finely chop the onion
Add to a large pot with a few tablespoons of the oil of your choice
Crush the clove of garlic and add to the pot
Fry on a low heat for a few minutes
Add the smoked paprika, curry powder, cumin, coriander, turmeric and chilli flakes
Slice the mushrooms and add to the pot, continue frying
Slice the carrots and add to the pot
Slice the celery and add to the pot
Fry for 5 – 8 minutes, stirring regularly to prevent the contents from sticking to the bottom too much (at this point, you’ll have some spicy crust forming on the bottom of the pot – that’s fine, you’ll deglaze the pot soon with the vegetable stock water)
Chop the baby potatoes into 1cm cubes and add to the pot
Add the vegetable stock water to the pot
Add the pearled barley and the split peas to the pot
Add the cooked white beans and kidney beans to the pot
Stir to cover everything in water – you may need to add more water at this point
Let this bubble and simmer away for approximately 10 – 15 minutes, stirring regularly
Season to taste
Dish up
