This is an easy one-pot meal that can be prepared and left to simmer for a little while before eating. It also makes good leftovers for lunch the following day.
Vegetable Breyani Ingredients:
1 Chopped onion
3 carrots, sliced
Knorr rice mate mild breyani
800ml hot water
200g frozen peas
1 tin of chickpeas
1 tin of tomatoes
1 tsp dried chili flakes
50ml fresh coriander, chopped
Vegetable Breyani Method :
In a large saucepan, fry the onions and carrots in oil for 4 min
Add the Knorr breyani mix, 800ml hot water and the uncooked rice and bring to boil
Stir in the peas, chickpeas and tin of tomatoes
Reduce the heat and simmer for 15min, stirring occasionally
Stir in the chili flakes and simmer for a further 5 min
Top with chopped coriander
